Breakfast Egg Muffins can be made with anything in the fridge, as long as you have enough eggs. This version of scrambled eggs can be made ahead of time, in large batches and then frozen or kept in the fridge. Microwave for 50 – 60 seconds and there’s a delicious, easy, quick breakfast – perfect for grabbing and going. Here’s a version with what was in the fridge on a chilly reading-week Monday.
Ingredients:
7 maple breakfast sausages, removed from casings
1 green pepper, chopped
2 cups spinach, chopped
0.25 red onion, diced
1 cup mushrooms, sliced
10 eggs
0.5 cups shredded cheddar
0.5 tsp garlic salt
0.5 tsp salt
1 tsp ground black pepper
1cm x 1cm cube butter
Really, any amount of anything will do as long as there are enough eggs.
Step 1.
Take advantage of the waiting time, the following steps can be done simultaneously.
a. Preheat the oven to 350F.
b. Cook sausages, breaking it up in a pan
c. Grease the muffin pan with your cube of butter
d. Beat 10 eggs
Step 2.
a. Take the sausages out of the pan, keeping the oil in the pan
b. Cook onions and mushrooms in the same pan for about 5 mins until onions and mushrooms are soft.
Step 3.
a. Add the spinach and green peppers, toss
b. Add seasoning, toss, cook until spinach and peppers are cooked, about 5 mins
Step 4.
a. Add the sausages back in
b. Stir and combine well, cook for another few minutes to make sure most of the liquid has dissolved
Step 5.
a. Split sausage mixture evenly between muffin pans
b. Follow with some shredded cheddar on top
c. Spoon egg mixture on top
d. Give each of them a little stir
Step 6.
a. Bake in oven for 20 mins
b. Do your dishes in the meantime…
Step 7.
a. Take out of oven and consume!
b. Leftovers can be put into a ziplock and frozen or put into the fridge. Double the recipe for double the leftovers and double the fun
